Black Beans
Like, chickpeas and kidney beans black beans are full of fibre and protein. However, black beans pack a little more fibre and magnesium than their counterparts, so they’ve got a leg-up on other beans.

Corn
Is a staple vegetable used all over the world. It is a good source of many vitamins and minerals including Vitamin B6 which plays important roles in our body’s energy production processes and potassium, a nutrient important for heart health

Guajillo Pepper
Basically jalapenos with a twist. Guajillo peppers are smoked jalapenos that have been left on the plant to turn a vibrant red. They contain compounds that promote heart health and immunity.

Tomatoes
A versatile little fruit (yes fruit) that is bursting with nutrients like Vitamin C and potassium. Tomatoes also have a powerful antioxidant called lycopene that give them there bright red colour.

Spinach

HOW TO PREPARE

Stovetop Pour 1 cup of vegetable broth and soup contents into a pan and heat over medium high heat. Stir soup occasionally for 3-5 minutes until it simmers.

Microwave Pour 1 cup of vegetable broth and soup contents into a microwave friendly bowl and heat for 4-5 minutes or until internal temperature reaches 74°C / 165°F.

Super spicy but yummy!
This is my first soup that I tried. It was super spicy for me but it is very yummy. Next time, I might add more broth so it will not be too spicy.

I used chicken broth.

FIlling!
This soup is very flavorful, with lots of spices. There's also many peppers, beans, vegetables, etc. A good source of fiber and protein; it's quite filling. It's advertised as being sweet and spicy but I wouldn't say it's really either of those. Just a flavorful tortilla soup full of peppers, beans, and sweet corn.
Tips:
I cooked on the stovetop, with 1 cup of chicken broth, and added the juice from half a lime.

Super tasty!
This one was interesting - the first one we got was SUPER spicy, to the point where we had to water it down and add greek yogurt. The second one was much more mild, and had really good flavor.
